Making toffee is a bit of a challenge. If you search the Internet for toffee recipes, you will find a lot of people have trouble pulling off a good batch. Even large candy companies have trouble with batch control and struggle to prevent butter separation and chocolate delamination. It's a little tricky and it takes some practice.

 

Pure, natural ingredients

Some folks add corn syrup, shortening or lecithin to help with blending. We like to avoid these things with careful batch control, so we can keep our ingredient list natural, simple and delicious:
                 Cane Sugar, Butter, Chocolate, Water, Salt and Nuts—that's it!

Naturally, we use the finest ingredients we can find, and only ship freshly made toffee.

 

Here's what makes a great toffee:

    • Not too thick! The crunchy, crumbly texture is everything.
    • No "gritty" texture. The sugar should never be crystallized.
    • Chocolate should be flavorful, and the coating thickness is important.
    • Chocolate temperature must be managed to control "bloom".
    • Nut piece size & quantity are important. Large nuts overpower the taste and change the texture.
    • Pre-toasting nuts can add a burned flavor.
    • A hint of salt mutes the sweetness just a little.
